Last Two Months in Review

To the average reader, it may seem that we have not eaten in almost two months. That conclusion is not true. However, the statement "we have not eaten anything new in almost two months" is basically true. We've had skewers, pizza, biscuits, bread, multiple versions of Indonesian Peanut Sauce Chicken, chicken tortilla soup, pasta galore, strawberry lemonade, a variety of stirfries (we do have a new favorite ingredient for stirfry: Newman's Own Sesame Ginger salad dressing), pork tenderloin on the grill, Rice-a-Roni (we like Four Cheese, Long Grain and Wild Rice--Original, Country Cheddar--apparently they don't like this one since it doesn't seem to be on their website, and Cheesy Italian Herb--also not on their website--we make the Easy Supper Risotto recipe on the back pretty often), quesadillas, taco salad, Outback Steakhouse (we always split the 9-oz Outback Special and get the loaded baked potato. We usually end up bringing home at least half of the food), Applebee's (we had to go there on Saturday to see some of the World Cup), and the Cabo Chicken sub at Quizno's. Okay, maybe we haven't ever written about some of these, but there's not a whole bunch to say about the ones we haven't written about. Maybe we'll be more creative in the days ahead. Maybe you could send us some of your recipes and we'll review them. You'll be famous. Just like we are.

You can check out James' blog for recipes. He was doing one recipe a week for a while. You might have to scroll back a little ways to find them, but his other writing is interesting too.

Jamie and my favorite recipes seem to all have to do with chicken and cheese.
Chicken with onions and cheese. Carmelize some onions with garlic. (A good way to speed this process is to add just a pinch of sugar to the onions.) Then put the onions on top of some chicken breasts in a baking pan. Cover the chicken and onions with some shredded cheddar or smoked gouda or a mixture of whatever kind of yummy cheese you want. Bake in the oven for however long it takes to bake chicken until its cooked through. :-P (Yes, I'm very exacting in my cooking.)

Nacho cheese chicken.
Cover about 5-6 chicken breasts with a jar of nacho cheese (you know, the Tostitos - or similar brand - kind you heat up and then dip chips in) and either half or a whole jar of salsa. Oh and put some bacon bits or crumbled bacon on there too. (Watching your weight? Cheat.) Bake it all for a while. When there's 10 minutes left until the chicken is done put some shredded cheese on top of all of that. Bake till the cheese is melty and kind of browned. Aw yeah. Cheesy. And you can put the extra sauce on a baked potato or pasta.

And our only healthy recipe so far:
roast a green pepper on your gas stove. Peel the black stuff off and then chop it (try to get the juice in a bowl to save it.) (Or you could not roast the green pepper...or just roast half.) Chop an onion. Carmelize half of it with crushed red peppers and garlic. Chop a big cucumber into like thick slices and then cut the slices in quarters. (Or the other way around is probably quicker.) Chop 1 or 2 tomatoes.
Get a bowl that's big enough for all the stuff.
Put in the cucumbers, then the green peppers, then the tomatoes, then the onions. (They should be in layers.) Then add crumbled feta cheese (ah cheese) to the top so it pretty much covers the top. (But don't get pre-crumbled feta cheese. Get blocks of it and then crumble it yourself.) Then pour red wine vinegar over it all to taste. When you serve it, you're supposed to get some of all the layers. And you could use sunflower oil instead of red wine vinegar.
